Ingredients
1/4 Cup Of Red Palm Oil
1/2 Chopped Onions
3 Spoons Of Chopped Scallion
Chopped Mushrooms
1 Bag Of Spinach
2 Spoons Of Chopped Garlic
Pinch Of Salt
Thyme
1Lb Fish Fillet
1/4 habanero (optional)
Directions
Cooking Method
1. Steam spinach in a pot separately.2. Season fish with some of the garlic, thyme, and salt or any seasoning salt.
3. Put the fish in a pan and add 1/2 of the red palm oil just on top of the fish then turn on heat on medium to low.
4. Saute one side of the fish for 3 minutes and saute the other side for three minutes, remove it and place it on a plate. Turn off heat to let the pan cool down.5. Add chopped onions, scallions, seasoning salt, thyme and remaining of the palm oil. Now you can turn on the heat on medium to low then mix it up and let it saute for
5 minutes (mix it up every few minutes).
6. Add chopped mushroom, mix it and let it cook for 3-4 minutes then add the steamed spinach.Serve this delicious spinach and fish over any grains you desire or enjoy it by itself.You can also use the same recipe with a different type of meat (chicken or steak).If you are a vegetarian you can skip the fish and just make enough spinach sauce .
