Ingredients
2 Spoons Of Olive Oil
2 to 3 Spoons Of Red Palm Oil
1 Spoon Of Chopped Garlic
2 Spoons Of Chopped Cilantro
1 Spoon Of Cream Cheese
1 Big Eggplant
1 Hand Full Of Carrot
1 Hand Full Of Mushroom
Pinch Of Salt
Seasoning Salt Of Your Choice
Directions
Cooking Method
1.Rinse all your vegetables, chop the eggplant in big cubes, cut mushrooms in half.
2.Add olive oil into pot, heat up for 1 minute, add garlic, 1 spoon chopped cilantro, cream cheese and saute for 2 minutes.
3.Add chopped eggplant, red palm oil, mix it up, add carrots and cook for 4 minutes.
4.Add mushrooms, cook for 2 minutes, add the rimaining 1 spoon of chopped cilantro.
5.Serve as a side dish or by itself or over your choice of carbs, wheat couscous, brown or white rice.Enjoy!
