Ingredients
1/2 Potato / 1/2 sweet yam
1 cup of lentils
1/2 chopped onion
2 spoons of chopped scallions
1 spoon of chopped cilantro /
or your favorite fresh herbs
1/2 teaspoon chopped ginger
1/2 spoon chopped garlic
pinch of seasoning salt
pinch of black pepper
3 1/2 cups of water
3 spoons of olive oil
3 spoons of red palm oil
1 peeled & chopped carrot
Directions
Cooking Method:
1. Put rinsed lentils in a pot, add 2 cups of water and bring to boil. Wait until all the water is finished or until the lentils are completely cooked and soft.2. Use a pot that you can saute veggies in. Add olive oil and turn heat to medium, add chopped onions, chopped scallions, half of the fresh herbs, garlic, salt & pepper, chopped ginger and saute for 3 minutes (stir it often).
3. Add, peel and chop regular and sweet potatoes, add chopped carrots, stir it and let it saute for 6 minutes in low heat.
4. Add boiled lentils in the pot and the remaining of the water and let it cook all together. Use a wooden spoon to mush the lentils and the potatoes in the pot while cooking to help make it a bit thick (but not a puree). Cook for 6 -10 minutes depending on what texture you want your soup to be. Add two spoons of red palm oil in the pot and cook only for 2 more minutes.
5. Serve soup in a bowl, add the rest of the chopped fresh herbs to garnish the dish, this will also add an extra freshness and taste to your soup.
