Ingredients
2lbs Meat (steak)
1 yellow onion (diced)
1 bunch scallion
3 big tomatoes
16oz Peanut Butter
6 ½ cups of water
8oz tomato paste
1 habanero pepper
(optional & to taste)
1 spoon of mince garlic
8 fresh bay leaves or
dried
0.04oz of salt
2 veggie or meat bouillon
cubes
2oz of fresh lemon or lime
juice
choice of veggies (steamed
carrots, cabbage, & or potatoes)
Directions
Cooking Notes: This meal cannot be rush. Stir soup often to ensure the pot doesn’t stick. Or use a non-stick pot. All veggies (carrots, cabbage & potatoes can be added as you cook the soup but it’s easier and healthier to steam.
Instructions:
Rinse meat, and cut in big sizes, and add to cooking put. Cut up onion as small as possible, or mince in a blender with tomatoes, garlic & scallion all together and add to pot. (You can cut habanero in half and add as well) Add water, salt, lemon, or lime juice, 5 of the bay leaves, 1 bouillon cube and bring to boil (high heat). Cook for 45 minutes, lower heat to medium, add the remaining bay leaves, and the last bouillon and cook for another 45 minutes. Bring heat to low and cook for 30 minutes or until meat is completely cooked and falling of the meat bones. (Also, a lot of oil from the peanut should surface on the top of pot).Serve over cooked rice, quinoa, or our traditional African grain, Fonio
