We are sharing a healthy vegan bowl of lentils & FONIO soup as brunch or a healthy light dinner. 1 cup of lentils, ½ onions, 2 diced tomatoes, garlic, black pepper, salt, habanero, fresh bay leaves, cilantro, 1 carrot 🥕 all sautéed in olive oil. Added 5 cups of water and thickened it with 3 spoons of Fonio to add some texture, deliciousness. Also it fills and hold you up for hours because it is simply nutritious.
